List of all courses/lessons ?

One, I'd like to have the choice. Two, and mostly, I'd like to pick a random lesson from time to time.

Also, if there's no way to find many of the lessons, how can I know that those lessons exist, other than search for the subject in "What would you like to learn" ?

What's stopping you from choosing a random subject and course by yourself? I understand you might find it useful to view all lessons from every topic, but overall, I think the use case for that is very niche. There's also Featured and Trending on the homepage that might help you pick what to randomly choose.

Well, if you just want something random to watch, you would do exactly that. Randomly pick something for leisure watching. If you are looking for something specific, which I think is more common. You can use the search, as you mentioned.

Isn't it the goal to randomly pick something? Otherwise, you would know what you are looking for.

Why not add a subject "other" here : https://codecourse.com/subjects ? And when clicking on "other", we see all the remaining courses, like "Practical Git" and everything else.

I'm OK now. Using some scraping, I have a list of 422 courses, and a list of 4744 videos. I'm happy with that, and will random.org those list.
